Last weekend I was sitting next to my brother and I was like Oh wowwww it looks like your hair is growing back really good!!! Buuuuuuuuuuuut he had a hat on and he was liiiiiiiike well yeah on the bottom but not on the top of my head and he pulls it off and his hair is very light and completely white on top!!! I was liiiiiiiike OH IT'S WHIIIIIIIIITE!!!

He's like yeah that's thanks to YOU!!! I was liiiiiiiiike whaaaaaaaaaaaat??? He's like yeah cuz NOW I have the DNA of a 38-year-old female, so i'm looking older!!!

YOU SMELL LIIIIIIIIIKE...

Soooooooooo this past Sunday, I was hanging out with my family, and while we were there, I was making ALL MY BOY nephews come and give Aunt Mary Hugs!!! Annnnnnd they were PRETENDING that this was such a travesty when in ACTUALITY they loooooooove my Mar-Bear Hugs!!! I mean lets be honest, THE SNUGGLE IS REAL!!!! 

.

Weeeeeeeeellll while I had snatched up Tony in a hug as he was running by, Jeremiah yells out, I'LL GIVE YOU A HUG!!! So I'm like get over here then!!! So I'm giving him a tight-squeezy hug and says, YOU SMELL LIKE JESUS!!!

.

I was like awwwwwwwwwww!!!! 

.

Buuuuuuuuut then I was like, WAIT, Jesus is a MAN...and men have a tendency to SMELL MORE THAN WOMAN!!! I'm NOT being sexist, it is a biological fact, men SMELL MORE THAN WOMAN...this is well known!!! 

.

And i'm not being disrespectful, I'm just saying, Jesus is A MAN...annnnnnnnnnd HISTORICALLY speaking, they did NOT have as good of hygiene in the Bible days...this is TRUTH, plus aside from not bathing everyday, they did NOT have deodorant...if I had lived in the Bible days, that ALONE is the reason WHY I would still be single-because of NO DEODORANT...I don't have clue what they reason is now...buuuuuuuut in the Bible days, that would have been the reason...have I told you guys I have a very sensitive nose?? ;)

Looooooooooooong story short, I want to BE LIKE JESUS in every way characteristically, buuuuuuuut IF he smelled like a MAN, I do NOT want to SMELL LIKE A MAN!!!

Sooooooooo after my initial awwwwwwwwwww, I said, WAIT, 

WHAT DOES JESUS SMELL LIKE???

Without hesitating he says, 

LIKE AN ANGEL!!!

I was liiiiiiiike, AWWWWWWWWWWWWWWWWWWWWWW!!! THANK YOU JER-BEAR!!!! That is liiiiiiiiiiiiike THE SWEETEST COMPLIMENT EVERRRRRR!!!!! Isn't that just THE SWEEEEEEETEST EVERRRRR?!?!?!?!? You guys, I smell like an ANGEL!!!👼 ♥♥♥ My heart just got all warm and fuzzy!!!! ♥♥♥♥♥♥

Proving your love!!!

"I want to prove my love to God!" Have you ever heard anyone say that before? I HAVE!!! And then they go on to give some huge thing or way they want to prove their love to God! Sometimes they are good, sacrificial things annnnnnnnd sometimes they're just CRAZY!!! Hee, hee!!!

Buuuuuuuuuuuut 

what does Jesus say about proving our love to Him???

Although their are many scriptures in the Bible about loving God, there are two specific things that Jesus tells his disciples to prove their love to him! In John 14, at the last supper before his crucifixion, Jesus speaks to the disciples about what they can do to prove their love to him!!! 

.

1. Keep my commandments

"If ye love me, keep my commandments." (John 14:15)

There was A LOT about to happen to Jesus...buuuuuut he didn't tell his disciples if you love me beat up my enemies, or cut off their ears, or defend me or argue with people about who I am...He simply said, IF YOU LOVE ME, KEEP MY COMMANDMENTS!!! Obedience!!! I saw a sign that says, I love Jesus buuuuuut I also cuss. WELL, If you LOVED JESUS...You would keep his commandments!!! Or you hear someone say, I love Jesus buuuuuuut I don't think I have to go to church or dress a certain way...I still listen to gospel music...weeeeeelllll good...buuuuuut Jesus said, IF YOU LOVE ME, keep my commandments!!! You can't prove your love for God while still living in sin.

2. Feed my sheep

15 So when they had dined, Jesus saith to Simon Peter, Simon, son of Jonas, lovest thou me more than these? He saith unto him, Yea, Lord; thou knowest that I love thee. He saith unto him, Feed my lambs.16 He saith to him again the second time, Simon, son of Jonas, lovest thou me? He saith unto him, Yea, Lord; thou knowest that I love thee. He saith unto him, Feed my sheep.17 He saith unto him the third time, Simon, son of Jonas, lovest thou me? Peter was grieved because he said unto him the third time, Lovest thou me? And he said unto him, Lord, thou knowest all things; thou knowest that I love thee. Jesus saith unto him, Feed my sheep.

I think Jesus is pretty straight forward about this matter and I really don't need to expound on it!!! FEED HIS SHEEP!!!

If you love God, there are two ways to prove your love to him, that doesn't involve arguing with agnostics or graffitting I love Jesus at the local pot shop, just KEEP HIS COMMANDMENTS AND FEED HIS SHEEP!!!! 

.

Buuuuuuuuuut God DOES give us one more way that we can prove to THE WORLD that we are his disciples...annnnnnnd often THIS can be harder than them all!!!!

3. Love one to another!!!

"By this shall all men know that ye are my disciples, if ye have love one to another." (1 John 13:35) So often it's hard to love each other when we see all the character flaws of our own church family- personalities clash, oppinons differ, some people don't know how to bite their tongue, some people don't know how to talk, some people don't know how to shut up, some people don't know how to ask for help, some people ask for TOO MUCH help, You know how it is...we can't ALL BE MARYS...hahahahahahaaaa!!! ;)  Good thing too, cuz I don't get along with people that are LIKE ME!!! Hee, hee!!!

You know THAT ONE PERSON that you just think is sooooo annoying??? WEEEEEELLLLLL just remember, we're ALL GOING TO HEAVEN TOGETHER...soooooo for good practice, would hurt to eat together down here too????

BUUUUUUUT JESUS SAYS...

Everyone WILL KNOW we are His disciples, by our LOVE ONE TO ANOTHER!!! Loving each other despite all our differences, is ACTUALLY one of our greatest witnessing tools!!! We need to LOVE EACH OTHER!!!

Tasty Thursday!!!

Let's go on a Food Adventure today!!! Soooooooo we did!!! It started out as a boring Saturday with nothing to do buuuuuuut then everything changed!!!

Cajeta is a small mom and pop shop with a whole lotta deliciousness. I was wondering in my mind, can a Mexican sho do really good boba?!? Well they sure did!!! 

.

The bobas were so nice and soft and just a little bit chewy. I got the almond flavored milk tea and it was soooooooo nice. My sister got a freshly squeezed lemonade, I tried it and it was lite and refreshing and not to sour! My niece and nephew got the taro milk teas and those were very good as well!

Also after seeing the picture on the wall, I HAD to try their hot chocolate!!!! It was the perfect combination of cinnamon and chocolate and not to thick!!!! It was soooooooo nice and would really be perfect to cozy up with on extra cold winter day!!!

Best Mexican Hot Chocolate EVERRRR!!!

We each got our own churros annnnnnd wow, jus WOW!!! Noooooooo actually, WOWWWWWW!!! That's more like it!!!! They were so, so, SOOOOOOO GOOOOOOD!!! Perfect crispness on the outside and soft on the inside! Warm and sweet and cinnamon goodness all over!!! Annnnnnnnd dipping sauces!!! We got the caramel dip and you can tell they as well are house-made!!!

They were very hardworking and friendly people! While some people may complain that their orders don't come out instantly, I just stood there so impressed and watched the man making our churros fresh!!!!

Today Cajetas turned our plain and boring Saturday into a delicious Food Adventure! We can't always be world travelers buuuuuuut today we got to experience a little piece of Mexico and I can't wait to go back!!!!

If you’re grouchy and you know it…

Sooooooooo i'm NOT grouchy a lot...buuuuuuuut I have my moments...as we all do right?!?!?!? Weeeeeeeeeeeeelllllll one day, a few months or so ago...I was just in SUCH A BAAAAAAAD MOOD!!! It just felt like fog in my brain when I tried to think and no amount of coffee was gonna change that 

and everyone was just being sooooooooooo ANNOYING...well in my mind...cuz ya know I was being grouchy!!!

.

Annnnnd I was out running around doing errands and I was just thinking... I JUST need to listen to Adventure's in Odyssey!!! And I was pulling up the AIO App on my phone when a prodding in my mind was liiiiiiiiiike...OR MAYBE YOU SHOULD LISTEN TO THE BIBLE!!! I was liiiiiike...Oh yeah...I could do that!!! I don't remember if I had already done my Bible time for the day...

My routine is I normally listen to it for the 30 minutes in the morning before I let myself listen to any other story on Audible OR listen to AIO...and at night, I read two pages before I go to sleep...Its just what works for me....buuuuuuut I don't think i had listened that day...I just went into the GETTIN STUFF DONE MODE and then when i was grouchy I was turning to Odyssey to soothe myself!!!

BUUUUUUUUUUUUUT...I turned on THE BIBLE!!! Annnnnnnd ya know, my day just got better after that!!!! There's just something about God's Word!!!! It could be the book of Leviticus talking about the jealousy offerings and hairs on the face and it just brings peace into my life!!!! 

.

I've said this before buuuuuuuuut when I was a kid and I had a bad dream, my mom would tell me to put my Bible under my pillow and I wouldn't have  bad dreams with God's word near my mind...annnnnnnnnd it sounds cRaZy buuuuuuuut to this day, I've neverrrrrr had a bad dream with God's Word under my pillow!!! There is sooooo much power in God's Word and it brings peace into our life!!!!

I saw this saying the other day that said, "It's better to TRY and FAIL, than to NOT TRY and SUCCEED!!!" I thought, YA KNOW, I LIIIIIIIIKE THAT!!!!

This is the part of this blog post where YOU ALL THINK I'm going to say that, THAT is how I feel about publishing my book...it's better to TRY this endeavor out and for the book to not succeed, buuuuuuuuuuuuut YOUR WRONG!!! Buuuuuuuuuuuut your wrong!!! If the gospel message gets to ONE PERSON, then it's been a success in my world...I may be a broke...;)...but still a success...sooooo NO this is NOT about the book endeavor!!!

P.S. Happy Monday! Current goal for the week is getting my taxes done, buying tickets...well travel tickets...NOT SPEEDING TICKETS annnnd not getting any speeding tickets!!! 😝

What are my options??? That is a question that we ask quite frequently. We are living in a day and age and a society that is BIG on alternatives...Options...choices. You could be on the airplane getting a meal and there is going to be someone that doesn't like what they are being given and they will say, What's my alternative??? Resturaunt menus are filled with OPTIONS for all the different eaters.

There is a vegetarian section, gluten free, low-carb, fat free... People want OPTIONS!!! People want ALTERNATIVES!!!

.

Everyone wants to hear an alternative to what they should do. A girl gets pregnant and people will tell her, these are YOUR OPTIONS!!! There is alternative music, alternative thinking, alternative schools, alternative educations, alternative lifestyles, alternative religions, alternative marriage there is EVEN alternative meat for vegetarians!!!😕😝

.

What really perturbs me is when people think of living for God as just an option. That alternative thinking seeps into our everyday living. But there has to be a time in our life that we decide when it comes to living for God, there are NO ALTERNATIVIVES!!! There are NO OTHER OPTIONS. If things don't turn out the way I planned, OH WELL, I'm gonna KEEP ON LIVING FOR GOD!!! My heart is Fixed! It bothers me so much when I hear people say, "I hope I don't backslide!"

.

I don't say that to sound holier-than-thou, I say it because it is worrisome to me. It means that somewhere in their mind backsliding IS an option in their life. They don't want to buuuuuuuuuut...IF...We can't live in a way that says, well I WANT to live for God, buuuuuuuuut if it doesn't work out, I guess I'll jus go back to the world! 

.

There is a bumper sticker that says, "Try Jesus, if you don't like Him, the devil will always take you back!" We can't live with that mentality, we can't just TRY Jesus!!! We have to BURN all of our bridges of alternatives and options in our life till we can say, I can't go back, BECAUSE I HAVE NOTHING LEFT TO GO BACK TOO!!! We have to say, THIS IS IT!!! This is my ONLY OPTION!!! There is NO PLAN B!!! I have NO ALTERNATIVES!!!

.

 Its like what Peter said to Jesus, "Then said Jesus unto the twelve, Will ye also go away? Then Simon Peter answered him, Lord, to whom shall we go? thou hast the words of eternal life." (John 6: 67:68)

.

Don't say, I'll TRY to pray...just PRAY!!!! Don't say I'll TRY to go to church...GO TO CHURCH!!! Don't say ill TRY to live for God...LIVE FOR GOD!!!! Obviously, life happens, buuuuuut we can't live in that TRYING, mentality, but the I WILL and I AM going to live for God!!!!

Yes, there are times that its HARD!!! Yes there are times that there are times of repentance in my life! Yes there are times that I need an attitude adjustment!!! Yes there are times that I'm confused, bewildered, frustrated, sad, mad, devastated, heartbroken... Buuuuut i'm NOT LOOKING for another way!!! its like Peter says, TO WHOM SHALL I GO???  I have no alternative for myself outside of a life devoted to living for my God!!! 

WHAT ELSE IS THERE??? I have NO other plans! I have NO other options!

Mexican Keto week!!!

Soooooo you guys... weeeeeelllll basically, something that I've discovered about myself I basically have to live a low carb lifestyle pretty much FOR LIFE!!! Like as a life style cuz as soon as I don't I gain a TON of weight!! I mean yeah we all take a day off here and there...buuuuut  you know NOT MONTHS!!! AHAHAAA!!!! So i've done low carb for years now and there are all kinds of low carb diets but I think keto seems the least like a DIET, diet to me!!!!

Sooooooo I give myself these KETO CHALLENGES...Liiiiiiike can I make a Keto Dish that that doesn't taste any different than NOT KETO???? I acomplished Lasagna---AND now NOT WITH ZOODLE NOODLES!!! It's not anything weird or plant based or pea protien or some random weird veggie...I came up with the most BRILLIANT noodle idea-and for a LOW FEE, i'll give you the recipe!!! Juuuuuuuuust kidding--- if you ask, I'll hook you up just cuz i'm AWESOME like that!!! ;) maryfranceswriting@gmail.com

Sooooooo after acomplishing the lasagna, I started craving red ENCHILADAS!!! Annnnnnnd this brought me TWO CHALLENGES!!! 1. Learning how to make homemade- NOT FROM THE CAN, authentic Mexican enchilada sauce. 2. Keto Enchiladas-THAT TASTE BOMB.COM!!!!

My first strategy was talking to pretty much EVERY MEXICAN I know about how they make their enchilada sauce!!! Pretty much half of Roswell, NM was involved in helping me accomplish this goal!!!

.

Soooooo originally i bought a paste of pepper puree...

that was unseasoned and it was basically like YOU make it, they had just already finished the boiling and pureeing part of the peppers for you...I thought this was still pretty homemade, BUUUUUUUT when I talked to Anali, she said, and I'm NOT quoting her buuuuuuut,  basically thats cheating and it will taste BETTER if i boil and puree the peppers myself...ugh...

.

Okaaaaaaay I just want to clarify that back in the day, my mother and I made homemade tamales and it was soooooo long ago there wasn't internet access and I guess I didn't really have any Mexican friends to ask and we liiiiiiike missed the part about pureeing the peppers in the blender and she made me like squeeze them through a cheesecloth and OMW...my hands were stained red for like WEEKS and it was sooooooo hard and such a big mess!!! The tamales were REALLY good buuuuuuuut I was just like okaaaaaaaay this is just waaaaaaaay TO MUCH WORK!!!! So i was pretty traumatized about using peppers like that for anything!!! LOL 

.

BUUUUUUT BLENDERS PEOPLE...

they work Mom, THEY WORK!!!! 

Weeeeeeeeeelllll I thought the first batch of red sauce came out PRETTY GOOD...buuuuuuut...it was a little salty...I added chicken boullion and then salt WITHOUT first tasting it...always taste it people before adding salt...it was STILL REALLY good and better than just about any enchilada sauce i've had...annnnnnnd I DID IT...I MADE MY KETO ENCHILADAS!!!!

Look at these delicious, but still low carb,  BEAUTIES!!!

ON TO THE GREEN SAUCE!!!

Soooooo i decided I was going to make the green chili enchilada sauce COMPLETELY FRESH!!! 

Sooooooooo I once again talked to a TON of friends and read a TON or authentic recipes annnnnnnd went shopping at good city...I really did NOT know what all I was buying buuuuuuuut IF it was a green pepper I bought some annnnnnnnd some tomatillos-which i found out are green tomatos

I roasted them all in the oven then deseeded them and threw em in the blender...

NOW I did two or three things different from all the recipes...

1. instead of one clove of garlic, i used liiiiiike ummm...10ish...you know what...I'm Italian and it gives amaaaaaaaaZing flavor

2. most people did not cook it for very long and maybe it's not really traditional buuuuuut since I was using tomatillos which are tomatos...I slow cooked it for several hours like we do with our pasta sauce...tomatoes are acidic and when you cook it for hours like that it cooks out the acid...plus it just seems like sauces taste better when you slow cook them...

I've been eating them for a week and have NOT yet gotten sick of them which is a pretty big miracle!!! My sister has been eating the non-keto ones i made her and she isn't tired of them YET...she said she may need a little break buuuuuuut she really likes them AND THATS A HUGE DEAL FOR MY SISTER TO STILL WANT THEM AFTER A WEEK!!! She gets tired of stuff PRETTY QUICKLEY!!!

Then on Tuesday, I JUST HAD TO TRY MY RED ENCHILADA SAUCE FROM the dried red peppers instead of the paste and WOWWWWWWW!!!! I can really taste the difference and will always make it like this or maybe completely fresh ones next time like I did with the green peppers!!!

I made these ones for my sister out of corn tortillas and I just filled them with cheese cuz I didn't have any meat on hand and she really like them and said that this read sauce for sure came out even better than the first time!!! Annnnnnnd liiiiiiike, MY SISTER DOES NOT JUST SAY STUFF TO BE NICE...she would NOT EVEN TOUCH my MExican rice!!!! AHAHAHAHAHAAA!!!

If a Mexican everrrr trys my enchiladas and then asks me for my enchilada sauce recipe...Ill liiiiiike literally NEVERRRR SHUT UP ABOUT IT...liiiiiiike NEVERRRRRR!!!! BEWARE: You will read about it!!!

My Pastor's wife told us about this place after Friday night prayer, she had just randomly found it going on a food adventure with a friend...YES, my pastor's wife does FOOD ADVENTURES TOO...thats another thing that makes her soooooo AWESOME!!! ;) a few months earlier, AND NOW IT HAS BEEN VOTED THE #1 RESTURAUNT ON YELP IN THE UNITED STATES OF AMERICA!!! YUP, the whole entire USA and it's right here in PHOENIX!!!

The HILARIOUS part about this, is that it is a VERY uh...GHETTOLICIOUS part of Phoenix too!!! Buuuuuuut hey...all the good places to eat usually are...well...EXCEPT Cheesecake Factory!!!;) It was really funny to see these RITZY Scottsdale folks walking the blocks over...cuz YES it's that crowded, OVER to the resturaunt...liiiiiiike literally you know it was their good deed to just drive in the neighborhood!!! BAHAHHAHAHAHAAAA!!!

With a full stomach and jolly heart, I greet the people waiting in line for their party to be called and as I see them looking at their menus wondering what hey should get, I feel compelled to help them out!!!

THE STEAK TACOS ARE THE BEST!!! Thank you they say, That's what I'm getting" says one man... and you literally see the relief come over him with his decision finally been made and you hear other chimes of yeah me too, thanks!

As I get in the car my sister says, "did they just ask you what they should get?" "No," I say. "I didn't think so," she says in a very unimpressed-with-my-helping-random-strangers-what-to-order-voice. Buuuuuuut me, I just straighten my cape, knowing I did my part in helping make someone's food adventure the best experience possible!!!! ;)

You guys, I'm telling you all, 

The Beef Tenderloin Steak tacos 

are for sure the star of the menu!!!

 I mean, pomegranate marinade, chipotle aioli, crispy fried jalapeños and onions, all in ONE TACO, how do you compete with that???? Weeeeeeelllll you don't!!! So El Pastor and Roasted veggie tacos just settle for being the delicious besties.

I love the fact that they allow you to mix and match the tacos so you can try three on one trip! I'm not a big seafood person buuuuuuut the tropical fish ones sound so good I'm considering trying one next time!!!!

They also have an option for us keto folks to get the tacos in a lettuce cup. Although I did NOT stick to keto this time around... cuz I mean... how can I write a really accurate review without trying those carbs... it's a sacrifice... buuuuuuut I do it for YOU ALL!!!!;) And next time, lettuce cups!!!!

For appetizers we got the house made chips and salsa and the street corn off the Cobb!!! Both were very good with lots of flavor. The salsa was neither mild or hot, just a little kick.

Shout out to our waitress Alexa, only her second day but you would've thought she'd work their forever. She was helpful, friendly and attentive! Your doing an excellent job, keep up the good work!!! (:

Two things you guys could improve on:

1. The rice and beans were just kinda eh! Kinda like the nice, buuuuuuut homely stepsister's of the delicious family!!! I really think you guys can do better with these two... I believe you can give these two a makeover and make them into the beauties they should be.

2. Give us the chips and salsa for free!!! I mean, come on you guys are #1!!! Everyone knows that the chips and salsa are supposed just come to us... that's part of being a Mexican restaurant!!!!! I knoooooow it's only $1.95.... Buuuuuuut still... free is better... jus sayin!!! And also MY SISTER said to make sure to say bigger cups of salsa!!! Although they do give you more salsa without an extra added charge, they're VERY SMALL...almost can't even fit a a bigger chip in them! 

My sister got  the La Diabla chicken pasta and did not like it! Buuuuuuut she's really picky about spices and I think there was something Smokey in the sauce and she doesn't NOT like smoked anything! I tried it and thought it was very good though!!! I love that the noodles were flavored peppers!!!

Well everyone, make sure you purposely save room for the churros!!! You will be blown away!!!

Crispy on the outside, soft on the inside and filled with cream and laid in caramel and a little pool of cream to dip them in case all that just isn't enough!

Well. It's been a few hours... 

I think I'm gonna go take a bite of the leftover besties!!!

So sorry everyone I didn’t blog all last week… I ended up getting soooooooooo SICK 😷 🤒 🤕 🤧!!!!! 

Look at how pitiful I looked!!! lol 😂 soooooo for the third time, back to back since November, I got a sinus infection!!!! My sister was like this is so weird because you’re neverrrrr sick 😷 like this!!! I’m liiiiiike I knoooooooow and I’m soooooo annoyed about it!!!

Anyways, I went to the doctor via video chat and she wrote me out a antibiotic and a steroid to calm down my sinuses and asked if I have a lot of sinus issues and I said yeah ever since I got Covid the first time I get sinus headaches and stuff! Soooooooo she said I may have to see a sinus specialist… buuuuut… idk… I’m not big on going to the doctor… I waited till getting sick a third time to actually go!!!

Also got some immune defense from Amazon!!! I’m a big vitamin nerd and this is 10 in one soooooo hopefully it works!!! If I don’t get sick for two months I’ll be happy!!!
