Cranberry Pico!

Okaaaaaaaay you guys still have time to make THE PERFECT Thanksgiving appetizer, that’s unique, flavorful and still uses a traditional staple and it’s even healthyISH!!!

We can’t stop eating it at my house 🏠!!!!

Taki Sandwich recipe!!!

Sooooooooo since this morning i've had hundreds of requests for my Taki Sandwich recipe...
                                        JUUUUUUUUUUST KIDDING!!!
Buuuuuuut I know you all are SECRETLY dying to try this!!! First of all, IF YOUR TRYING TO LOSE WEIGHT, don't eat this UNLESS your NOT planning to eat anything else the whole day!!!! And NO MATTER WHAT, this is NOT keto friendly...ahhhh...here I sit relishing in my non-keto yesterday!!! Hee, hee!!! Anyways, lets get to this amaaaaaaaaaZing with a capital Z recipe!!!

TAKI SANDWICH
Ingredients: 1-2 slices of soft bread, (white is most easy buuuuuut brioche bread is THE BEST)
Mayo (I prefer Kraft)
TAKIS!!! (8-16ish)
Directions: Spread a thick, but not too thick layer of mayo on bread each side of bread, i only do half a sandwich buuuuuut you can do a whole if you want, then lay your takis down until they go all the way across the bread and mayo, maybe add a few extra for good measure, then put the second slice of mayo bread on top, pick it up annnnnnnd...

cRuNcH!!!
Soft bread is met with a spicy crunch and finished with a creamy slap of a deliciousness!!! 
Can we say PARTAAAAY in the mouth???

I'm telling you guys, this sandwich is worth EVERY SINGLE CALORIE!!! I do NOT regret eating this last night!!! and I'll let you in on a little secret, my NOT SO FOOD ADVENTUROUS SISTER, said she was NOT going to try this yesterday because it was "DISGUSTING" buuuuuuuuut I told her to JUST TRY IT...soooooo she took a bite of her kid's sandwich and then another AND ANOTHER....until they said MOOOOOOOM...she's probably gonna yell at me for sharing her secret, buuuuuuut SHE LOOOOOOOVED IT!!!!

Also, try dipping your takis in mayo...not like a ton...buuuuuut yeah...remember...these are splurge meals or snacks and should NOT be eaten regularly...MODERATION!!!! Hee, hee!!!

Mary's BAMMMMM Fried Rice!!!

I haven't shared with you all a recipe in a superrrrr looooooooong time buuuut I believe that I simply can NOT shut up about my latest recipe creation...just CAN NOT!!!! Soooooo although I do not personally follow the keto eating plan, this recipe IS low carb and keto friendly. I'm a lean meat, high protein, high veggies and minimum fruit eating plan, its what works for me so I've come up with some really BOMB recipes!!!

The way I feel about cooking is this, anyone can make fattening food taste good, weeeeelllllll I told my sis that and she said, UH NOOOO, that's not quite true, buuuuuut any good cook can make unhealthy food taste good, buuuuuuuut I Mary Frances Ginty do not strive to be good, I strive to be EXCELLENT!!!

IF you think cauliflower rice is NASTY one of two things: 1. You ate it by a person that doesn't know how to cook it! 2. YOU don't know how to cook it!!! AHAHAHAHAHAHAAAA!!! So the key is STEAM it and then saute it as well!!!
Sooooooo with out further ado...

MARY'S BAMMMMM FRIED RICE!!!
Ingredients:
2 teaspoons of freshly grated ginger
2-4 cloves garlic diced
1/2 cup of diced ham
1/2 cup cooked chicken
1/4 cup chopped green onions/chives
1/4 diced onion
1/2 cup chopped broccoli
1 diced jalapeno
1.5 tablespoons oil (Your favorite)
2 teaspoons sesame oil (Adds amazing flavor but too much is TOO MUCH!;)
1-2 tablespoon soy sauce
1 bag frozen rice cauliflower medley
2-3 eggs
Directions:
Steam rice in microwave
Saute garlic and ginger in oils, about a minute or 2 till they start to brown slightly, then add the steamed cauliflower rice, cook together a minute, then add everything else. Once broccoli is starting to soften, add the soy sauce, add in raw eggs at the end till they are cooked. I like to get everything throughly cooked, then let the bottom brown, flip, let that part brown then...
BAM!!!
This stuff is SOOOOOO good!!! I'm gonna buy stuff tomorrow to make another batch up!!!I'm NOT joking, don't knock the cauliflower until you've given it a try....EVEN MY SISTER LIKED IT... annnnnd that says A LOT!!! Also, one of my sister in laws, who is doing keto, was really craving fried rice, she said her and her husband bought a frozen cauliflower fried rice from Sprouts and much to her disappointment, it was DISAPPOINTING!!! Buuuuuut she LOOOOOOVED MINE!!! What does Sprouts have on an ITALIAN GIRL??? Nothing, besides a BUSINESS...ahahahahaaaa!!!

*I just wanna say that it's hard for me to actually give directions for cooking cuz I just kinda do it...buuuuuut hopefully get the jist!!!
.
*Also, you can add in lots of other veggies if you want, these are just the ones I like. Carrots and peas are always good, some people like mushrooms and water chestnuts. You can also do more on the meat or all chicken or all ham or pork...WHATEVERRRR! And if you don't like spice you may wanna leave out the jalapeno or just half...I looooooove the added kick tho!!! Yuuuuummmm!!! Oooooh also, you can make this without the cauliflower rice by using 2 cups of your favorite already cooked rice instead, or even quinona instead, which is a healthier grain that is also very high in protein!

*Also, I don't ACTUALLY measure anything...so it's about that much oil, could be a little less, I just kinda eyeball JUST enough!!! LOL Also, I season to taste as I cook with salt, pepper and Montreal Steak seasoning. I'm a HUGE spice person! No blah food in my kitchen!!! :)

Oooops Recipe, buuuuuuuut...

Ummmmm...Soooooo yeah...be careful when your pouring the chipotle-raspberry sauce on your breakfast sandwich!!! 
I was liiiiiiike...OOOOOOOOOOPS!!!!
BUUUUUUUUUUUUUUUT...
YUUUUUUUMMMMM!!!!

Mary's Breakfast Sandwich
This is basically what I eat every morning, sometimes I switch out the chipotle Sauce for Ketchup and Tapatio! Or a Lenders Little bagel instead of Daves Killer bread...or ribs instead of bacon...you can be creative with your leftovers...use that BRAIN God gave you!!! 

Recipe
Ingredients
1 Slice of Daves Killer Bread
1 pat of butter
1 Egg Cooked however you like ( I prefer fried)
1 slice bacon Costo Pre-cooked bacon OR Kraft Cheese (I try not to do BOTH)
Costco Raspberry-Chipolte Sauce

Directions
Toast buttered bread in a pan til bread is browned
Cook egg
Add cheese slice to egg as it melts on to if you choose cheese
Microwave bacon slice if you choose bacon 
Cut toasted bread in half trianglularley...that's THE RIGHT WAY to cut bread...combine it all together like a sandwich and put your sauce inside...IF you need further directions than this...you either NEED HELP or you need to hire me for COOKING LESSONS!!!! Hee, hee!!! 

*If you don't NEED to bother with HOW MUCH YOU EAT....Although...MOST OF YOU DO, you can use two slices of bread, 2 eggs, etc.. and make a WHOLE sandwich!

Mary's World Famous, Better than Kim's, Better than yo momma's, better than Cheesecake Factory's, Better than Paradise Bakery's, Better than Panera's, Better than Arby's,Best in the world, EVEN YOUR HUSBAND will love it, CHICKEN SALAD!!! :)))

Okaaaaaay sooooo EVERYONE in the whole world knows that I make like THE BEST chicken salad EVERRR....BUT just in case you didn't know that....I thought that perhaps I should tell you about it!!! :))) (Just cuz I'm soooo nice like that!!! :)

My friend Sheree ADORES my chicken salad!!!! So we were at this ladies thing this one time and i'm NOT gonna say when or WHERE, how many years ago or NUTIN cuz I don't want ANYONE to think that perhaps i'm talkin about THERE chicken salad...LOL...but Sheree had decided that after tastin MY CHICKEN SALAD that she liked chicken salad since mine was the only kind she had everrrr tasted she assumed that everyone's was like mine, well we went to this one thing, and she tried this ONE kinda chicken salad, which I actually liked, I mean I didn't think it was AS GOOD as mine...LOL...but I still liked it!!! Sheree, was like, Mary when I saw chicken salad I got soooo excited, and THEN I tried it and I was like OOOOOO this is NOT how chicken salad is supposed to taste!!! HAHAHA!!! I guess I had set a high standard for her!!! Later on I heard the lady tryin to get rid of it...HAHA!!! She was like, my husband JUST WON"T eat this!!!!! BAHAHAHA!!! And being the humble person I am, I couldn't help but think to myself, I BET he would eat MY CHICKEN SALAD!!!!!!

Everyone would always rave about my chicken salad but I didn't really see what they were makin such a big deal about...its JUST CHICKEN SALAD...then I began tryin other people's and I was like Oooooo....thats why everyone likes mine sooooo much!!! Well its really quite simple so being the generous person that I am, I thought I would share it with you this is what I call...

 Mary's World Famous, Better than Kim's, Better than yo momma's, better than Cheesecake Factory's, Better than Paradise Bakery's, Better than Panera's, Better than Arby's, Best in the world, EVEN YOUR HUSBAND will love it, CHICKEN SALAD!!! :))) AKA...

Mary’s Chicken Salad!!!
Well what are we waitin for here is the recipe for...
You will need...
4 boneless skinless chicken breast boiled till completely cooked then chopped up
2 tbs of sweet relish
3-4 tbs of white vinegar
half an onion chopped tiny
about 2 cups of mayo
2 tsp of salt
1-2 tsp black pepper

 Directions:
Mix it all together and let sit in fridge for at least 3 hours before eating.(You can also ad in chives, walnuts, grapes, pineapple if you desire- I’ve also added in cilantro before and ed it!!!;)

This salad will usually stay good in the fridge for at least a week a week or so cuz the vinegar preserves it and btw- this is NOT an exact recipe I NEVER measure anything…LOL!

So back in January, I decided to try and taste Cheesecake factory's chicken salad, JUST TO SEE if it was as goooood as mine....OR OMW WHAT IF IT WAS BETTER!!! I HAD TO KNOW!!! I was SOOOOOOOO NERVOUS about eatin it...WHAT IF...it REALLLLLY was better THAN MINE?????? When the waiter put that sandwhich in front of me...FEAR GRIPPED MY HEART!!!! As I raised it to my mouth I wondered...

 WOULD THIS BE THE CHICKEN SALAD RECIPE THAT BEAT MY CHICKEN SALAD????

As I took a bite of that sandwhich, my tasebuds were greeted absolute delicousness...I took another bite and savored the flavor in my mouth...Mmmmmm....Mmmmm...MMMMMM....soooooo, soooo SOOOOO GOOOD!!!! Sooooo good that I could HONESTLY say that it was almost, ALMOST as good as MINE!!! Thats right folks...I said ALMOST...but in that moment I knew beyond a shadow of a doubt, that MINE was still BETTER!!!!!

When the waiter came to get my empty plate I told him that they had a REALLLLLY good chicken salad sandwhich. He was like, Oh yeah we do!!! I was like YEAH it was REALLLLLY GOOOOOD...Almost as good as MINE!!! Then I gave him sweeet smile and made him laugh...HAHAHA!!! It really is GOOOOOD though!!! (I get the chicken salad sandwich almost EVERY time I go...which isn't to often...LOL!!)

BUt its TRUE, Almost ALL the ladies in my church LOVE my chicken salad!!! I make it alot for different things and people are ALWAYS lookin forward to it!!! Sis. Abbott, Bishop Abbott's WIFE...LOVES my chicken salad!!! She told me that MY CHICKEN SALAD sanwhich IS in fact BETTER THAN Cheesecake Factory's!!! AND...She has requested me to make it lot of times and She EVEN....DRUM ROLL...SHE EVEN...DRUM ROLL...SHE EVEN...DRUM ROLL...SHE EVEN ASKED ME FOR MY RECIPE!!!!!!!!!!! Do you know what an HONOR it was for SIS. ABBOTT, my role model, a meek and quiet spirit, the ultimate prayer warrior, reader of God's word, the most SUBMISSIVE, SPIRITUAL lady I know, a lady of legacy, who also happens to have amazing industrial skills AND to top it all off a really, really good cook, ASK ME,  wonderful, beautiful lil O ME...LOL....for MY RECIPE????? I WAS SOOOO HOnoRED!!!! :)))


WEEEELLLL what are you waitin for...go make your hubby some of this deliciousness...and if you don't have one...WEEEELLLL...maybe this will help you get one...I mean...it hasn't worked FOR ME YET...BUT...LOL...Maybe it will work for YOU!!! HAHAHAHAHA!!! :))))

MY soup recipe!!!

OMW!!! Sooooo I don't wanna like brag about myself or nothing but, OKaaaay I take that back, ACTUALLY, I do want to brag about myself!!!!! (Just gonna be honest!;) I MADE LIKE THE AWESOMEST SOUP EVER!!! It was sooooo GOOD! I was like WOW! And I just made the whole thing up myself. AND I think it's pretty healthy too, although I wasn't actually sure how to figure out the calories or WW points for it!

And like ANYONE and EVERYONE that stepped foot into my household, weather coming home from work, dropping off kids or catching a ride, EVERYONE was given some to try and they all said they LOVED it! I was SOOO happy!!! The biggest honor of ALL was that my mamma tryed some and said it was REALLY good! AND she don't even like spicy stuff! But when I came out of our house to go run some errands with her, and I got in her car, she was like "WHAT are you cookin in there? YOU SMELL GOOD!"


Soooo I was sitting there eating a bowl, just TOTALLY complimenting myself and I'm thinkin okaaay so WHAT should I name my soup? Cuz I mean it's like SOOOO good it just HAS to have a name for it. So i'm thinking about my soup, It has some punch to it, almost like some slight attitude but not a ton... its kind of got a southwestern twist to it, it's a little spicy but not too hot, just like a kick in the shins to wake you up, but it doesn't actually knock you out..DELICOUS... Then ALL of the sudden I realized that the soup reminded me of someone, someone special that I just couldn't stop thinking about while I ate it...AND as I thought about this person, I knew the name for my AMaZING soup just had to be ....
ARIZONA HOTTIE SOUP!
 Yes, thats right people, I named the soup after MYSELF!!! ;) ;) ;)

Heres whatcha need to make it...
3 boneless skinless chicken breast
Chicken broth
(For the broth I only had like half a thing in the fridge so then I just used the water that I had boiled my chicken in combination with the broth)
1 box of Spanish Rice-a-roni
(and I used the Natural, wild rice one, but you can use whatever)
1/2 pobalono pepper
1 Jalepeno pepper
some red oninon
some yellow onion
Cilantro
5 cubes of chicken bullion
about 5 chunks of garlic
Green onion
Fresh chopped basil
1 can of kidney beans
1 can of stewed tomatoes
Crushed red pepper
Cayenne pepper
Chili powder
Garlic powder
Paprika powder
Season salt
2 tablespoons of Olive oil
(You can use whatever but Olive oil is Healthiest)
NOW heres whatcha do!!!
Boil the three chicken breast till they are cooked
Chop up the onions, peppers, garlic, basil (I like to chop up everything really nice and small)
 saute them in the olive oil until they start to brown
Add in the kindey beans and stewed tomatoes
Add Paprika, chili powder, cayenne pepper, crushed red pepper, garlic powder, season salt
(I wish I could tell you guys the exact amount but I really don't measure the spicy peppers were probably only about 1/2 teaspoon and the other ones a whole teaspoon, You just gotta go with your instincts and decide how spicey you want it! FYI- when you do the Jalepeno pepper, the SPICE is in all those little seeds so you decide how many you want in I used about half )
Let this all kind of simmer in saute pan for about 15 minutes
Cut up chicken and put in seperate pot will all your broth
 (This is like a medium size pan, maybe large but NOT HUGE!!!)
After 15 minutes combine all the veggies in with the chicken and broth
Bring to a boil then bring the heat back down to medium 
 let it boil together for about 30-45 minutes
Now add in your box of Rice-a-roni
Let it boil for about 10-15 min just check your rice and see if its cooked
While your rice is cookin chop up some more onions and peppers real fine and some CILANTRO
When your soup is done...

 Get YO self a bowl!!!
Sprinkle on top the fresh veggies you just chopped AND OMW take a bite!!! TAKE A BITE!!!
YOU ain't gonna be SORRY!!!
Cuz it's AWESOME!!! IRRESISTABLE!!! YOU LOVE IT! YOU WANT MORE!!!
AND that my friends is WHY it's named after me!!!
(Don't deny it!!! Thats WHY YOUR on MY BLOG AGAIN!!! Uh huh, uh huh! ;)
