Sooooooooooo as I've been telling you all, my brother John and I made homemade ravioli for Easter, annnnnnnnnd they were soooooooooo GOOD, anyway, it just sooooooooo happens that my nephew Joseph LOOOOOOVES ravioli!!!
So yesterday he a plate full of them, and let me tell you, FOR JOSEPH to actually eat that much is a BIG DEAL, he's NOT a big eater!!! So then his mom comes outside and is like, Joseph, did you eat that ravioli that you dropped on the floor earlier? (Apparently, she had been looking for it to clean up) Joseph was like, YUP, I sure did!!!! Soooooooo we all started laughing!!! And i'm like, YEAH, that's MY BOY!!! Cuz I DESPISE when THE FOOD I MAKE GETS WASTED...I don't care if its store bought, BUUUUUUT IF I MADE IT WITH MY HANDS...yeah...
So we're all laughing and Joseph says, well the reason why I ate it is because I have a rule about ravioli!!! We're like, a RULE????
Soooooooooooo there is an Italian tradition in our family to make what we call Easter Pies! Easter pies are NOT a dessert, but a meal! Kind of like a calizone, buuuuuuuut BETTER, waaaaaaaaaayyyy BETTER!!!
The long ones are my favorite, you fill them with ricotta cheese and sausage or ham...these ones are my favorite!!!! The round ones are filled with muenster cheese and all kinds of meats, solidified together with egg...these ones are good, but a little to rich for my liking!!!
I believe the round ones are from my mom's mom side of the family and the long ones are from my mom's dad's...buuuuut it could be the other way around!!! Traditionally speaking, Catholic Italians would make these pies on Good Friday and eat them on Saturday before Easter to break their period of fasting from meat during lent! Obviously our family doesn't do this that way, we just enjoy them during this time of the year!!! :)))
I admit that we are a little bit stingier with passing these Easter pies out than we are with our Christmas cookies! The reason being is that they are quite pricey to make, annnnnnnnnnd NOT EVERYONE LIKES THEM!!!! We don't want them to go to waste, so yeah!!!

Today we started a NEW Italian-Easter tradition....
I went to my brother John's this afternoon, we're a pretty good team in the kitchen, pretty much cuz I do whatever he says!!! LOL

With the dough we had left, I said, lets make ONE really big ravioli!!! My grandpa said his mom used to make them just ONE really big ravioli, the size of a bowl!!!
Its as big as my hand!!!
Annnnnnnnnnnnnnd of course we taste tested our ravioli,
it was SOOOOOOOOOO GOOOOOOD!!!!
Makes the store bought stuff really dim in comparison to THE GINTYS!!! Olive Garden ain't got NOTHING on us!!!
So if you read my post below, "Scary Bug Moment" you all will be happy to know that I ACTUALLY FOUND OUT WHAT THOSE "BUGS" ARE!!! Last evening, I got a very informative message from a lovely little friend...

I tell ya, you learn something new, EVERY DAY!!! WOW!!!
I waited 2.5 hours to do so!!!! It was CRAZY!!! It took me foreverrrr to even find a parking spot!!! I almost just walked away, THE ONLY THING THAT STOPPED ME was knowing the fact that I had just a month earlier waited line for 3.5 hours to see the Hello Kitty Café Van...I was guilted into waiting!!!
The chick behind me literally talked THE WHOLE 2.5 hour wait!!! Thankfully it was NOT TO ME but to the older gentleman behind her...I suspected a slight crush on his part...he seemed ENTHRALLED by her!!! LOL She eats horse meat...In case anyone was wondering!!! AHAHA!!!
The thing that bummed me out was that after ALL THAT WAITING, they were out of the "I voted today!" Stickers!!! I was like, seriously??? I waited 2.5 HOURS...I WANT MY STICKER!!! Grrrrrrrr!!!!
Then, immediately after I turned in my ballot, they announced that Trump had won for the Republican party...I was like, yeah, I'm sooooo sure my vote just DID NOT EVEN COUNT FOR NOTHING!!!!! I'm sooooo doing the early ballot for November!!!
I was thinking the other day, about WHAT it was that got my mom in church??? The answer hit me and I was like, WOW!!! It was HER PERSONALITY AND CHARACTER!!! God used those traits to get her to a Pentecostal church!!!
How so??? Well, my mom was stubborn, and altho she was no longer going a Catholic church like she had been raised in, she was STILL CATHOLIC!!! She believed the doctrine through and through, she had other reasons for NOT attending church which i'll explain in another post!!! So when her neighbor across the street, Sis. Kathy invited her to church, she said no, over and over again.
HOWEVER, this is where God stepped in and used my mom's personality to get her to church. One day, Sis. Kathy and her husband did not have a way of getting to church. Being fairly new converts themselves, they desperately wanted to be in church, so Sis. Kathy went across the street and asked my mom if she would give them a ride to their church. Of course, being the considerate and helpful person that my mom was, she said YES!!!
Annnnnnd once they got to the church, they said to my mom, well, now that your here, why don't you just come in...my mom did annnnnnnd from that moment, she NEVER LOOKED BACK!!! God knew that if she just GOT THERE!!! Buuuuuut the thing that stands out to me is this,
EVEN BEFORE MY MOM WAS IN CHURCH,
SHE WAS BRINGING PEOPLE TO CHURCH!!!
Bringing people to church,
is LITERALLY WHAT
GOT HER IN CHURCH!!!
Bringing people to church is what brought my family to THE TRUTH!!!
Bringing people to church is IN MY BLOOD!!!
How can I NOT bring people to church, when this is the very thing that brought me to my own salvation! Bringing people to church is NOT my obligation, it's MY BLESSING!!!

Buuuuuut after waiting and hour I was COMMITED!!! LOL
Annnnnnd plus now I can add it to my list of totally RAD things I've accomplished in life!!! :)
Annnnnnnnnnnnnnd LOOK the hub caps even have pink bows on it!!! SOOOOOOOOOOOOO CUUUUUUUUUUUUUUUUUUUUUUUUUTE!!! Awwwwwwwww!!!!
Annnnnnnnnnnd I found out that their were WAAAAAAAY crazier, ADULT Hello Kitty fans than ME!!! I mean, I'm like, MILD compared to these folks!!! The girl in the above pic was DRESSED like a Hello Kitty-Kat, the girl behind me was ACTUALLY TALKING ABOUT HOW HER DREAM IS TO GET MARRIED AT HELLO KITTY LAND IN JAPAN!!! Yes, there really IS a hello kitty land and YES, I want to go there, buuuuuuuuuut NOOOOOO I don't want to get married there!!! I mean, COME ON PEOPLE!!!
And then the mom in front of me, her daughter has to go to the bathroom, so she just PICKS HER UP, and has go by the tree!!!! I was like ummmm, We're in SCOTTSDALE, THE SCOTTSDALE QUARTER, this is NOT the best place just have your daughter PEE on the rocks..."I'm jus sayin!" I woulda GLADLY saved your spot for you in line had you SIMPLY ASKED ME!!! You shoulda seen MJ tho, her mouth was hanging open, then the two of us could NOT stop laughing!!!! AHAHAHAHA!!!
Finally we're there, and our sales lady was this adorable lil Asian chick...Asians LOVE Hello Kitty, she was created by one of their people!!!
Stultz just couldn't UNDERSTAND WHY I would pay $3 for a water bottle!!! I'm like, Jonathon, its PINK, Its HELLO KITTY, and its in the SHAPE OF A BOW, need we ask ANY MORE QUESTIONS???
